What do you do with turkey bone after you removed the meat?.As usual, the bone go to the trash but this year my MIL told me that she usually make soup from it.Well,I thought she suggested to me , she like turkey soup. After boiling the turkey bone with 4 liter of water for an hour ,I invite my MIL to have a bowl but she said "No Thanks"!!.WTF!!..okay la,she just talk riddle to me....hmmm.. she told me about her yesteryears, when she cook turkey she will make soup from the bone but not asking me to make soup for her..ok...ok.maybe I misunderstood her message or I took her words too serious?..Well....so what to do with whole pot of turkey soup??.I saw few blogger make turkey soup, add in rice and called turkey rice soup. But mine soup have celery, onion and carrot..So the idea of making congee is perfect for this whole pot of heavy fragrant turkey soup.I use Carlrose or sushi rice to make congee which is more soft and easy to break down.. Did you see other thingy beside turkey meat?..what is that??..Yes,it's dried scallop and dried oyster.Believe me,it's really good and sweet..I just add some salt, then serve with whire pepper.
Yesterday I was looking for Kaiser Roll recipe online.Hubby love bread especially kaiser roll with his sandwich.I "google " and found a bread forum .It's quite interesting ,I like the author show us step by step how to make and fold the bread. Here is The fresh loaf site, you can look for other bread recipe which you might find interested and try yourself at home.....I definitely go back there again once we finish this batch bread. I don't have kaiser roll stamp,so I use the author technique to fold the roll.Hmmmmm...I'm going to look for kaiser roll stamp soon...anyone know where can I get the stamp with reasonable price?.
I shopped in Trader Joe's last week at Thanksgiving 's eve and saw something unique on the shelf. So I take a good look, there are 3 different varieties of Thailand famous prepacked sauce with tuna . At first, I thought it's just the paste or sauce but I wonder why there is photo on the packet. It's the photo suggest we cook with Tuna?.Then I look for the price,it's tag at $1.39.Wow!!..that still a good price even though it's doesn't come with Tuna .So,I grab each flavor one pack to try first. Not dare to buy too much, who know ....maybe it's not up to my expectation or lousy!!..This product made in Thailand and specially packed for Trader Joe's.For those who have Trader Joe's nearby, give a try.In fact it's really good..Here is my review.... Today,I start with Green Curry sauce first.I open the pouch and pour out the contain in a bowl.I quickly check the contain, yes!!it's come with good amount of tuna.Beside that I add some string bean and 1/4 cup of water to clean out the pouch sauce.Microwave it for 2-3 minutes.Serve with white rice.
What do you do with leftover Turkey after Thanksgiving?.Well,as usual Elliot eat with gravy and cranberry sauce for lunch and dinner for the last 2 days ago but still, there are plenty left.So I decide to use some Turkey meat and wrap with Empanadas skin.Instead of baking Empanadas as suggested on the package, I prefer deep fried.Since I was introduce to Empanadas by Chef Gertrude,I don't have to make myself puff skin. You can buy Empanadas in any supermarket store in frozen section.I used Goya brand but there is other brands as well.
I have no idea Lee Kum Kee made ready to cook Kung Pao sauce until I saw it on BigLots shelf.Well,.I think there are many others ready to cook sauce made by Lee Kum Kee beside Kung Pao sauce. But I just saw Moo Shu Pork sauce and Mongolian Beef sauce....there 3 so far...hmmmm....let me start cooking with Kung Pao sauce first..To my surprised,LKK,Kung Pao sauce is really good!!..It's really easy and simple to cook ,just follow the direction on the back of the pack.. .....in order to make it look like Kung Pao Chicken sell in American Chinese restaurant dish, I add in some diced vegetables..Elliot eat it,said it's good just a bit too spicy for him but I add no spices or chili into this dish.oh!! yeah almost forget that,I add some whole dried pepper but still....I find it's not spicy to my tongue....hmmmm...maybe I'm so used to eat X-spicy food,so nothing is spicy and hot for me anymore .A pack of Kung Pao sauce can makes 4-5 servings. It's said the preparation time is about 6 minutes, cooking time 5 minutes.Well,it's true if you use ready cut vegetable but I cut all my vegetables from scratch, that why took more than 6 minutes.
1 lbs boneless skinless chicken cut diced
20 shrimp-clean and deviened
8 oz water chestnut -cut diced
1 stick carrot-cut diced
1/3 cup roasted peanuts
1 tbsp cooking oil
2 celery-cut diced
1 large onion-cut diced
5-6 dried pepper chili
1 tsp chicken powder
The moment my MIL come to celebrate Thanksgiving with us,she already ask me to bring her to Kohl's to buy some lingerie.I don't understand why Kohl's usually have 10-15% addition discount just for senior on every Tuesday or Wednesday.I once asked Kohl's staff about this, they just said"you need to be a senior" and" I said ,I know but I'm not a senior"!!.So this afternoon my MIL remind me again that she would like to go to Kohl's if I willing to bring her.Of course,I will bring her as I already promise her on the day one.The moment I park my van in their busy parking lot,I saw this woman carry out 2 boxes of Hamilton's toaster.I asked her"..wow!!....look like the great sale is going on"!!..She told me that each toaster cost $5.95 and said "hurry up,run inside, people is grabbing left and right for it".I run my dear life while dragging Mishu with me.At the front of Kohl's entrance, there 's a whole bunch of different brands of toaster but when I ask for the $5.95 toaster, the sale guy told me it's gone .Furthermore, they put it on sale for just an hour ,so the one hour was up the moment I walk into the store!!.Damn!!.Anyway,I choose Rival's toaster which cost $13.95 ,if I 'm a bit slower, I think this unit was gone too!!.I quickly bring to cashier to ring up and loaded into my van ASAP.Then I go back to help my MIL choose her Today Kohl's have One Day Sale on top of 50-60% off the original price.Every $50 purchase, you will get $10 cash back coupon. My MIL bought her clothes and lingerie and she got 2 $10 coupon. She handle me the coupons since she leaving tomorrow. So I will use the $20 coupon for my next purchase.I saw few Simple Vera Wang clothes which I like but Mishu is acting up,cranky, she wanna to get her nap,so we just hit home.Last week I bought 2 Simple Vera's shirt at 30% discount,if I'm a senior ,of course I will get another 15% discount!!
I'm not a person who want to wake up early in the morning, just for shopping.I always shop whenever there's a Sale on regular day as you all know, I love shopping!!..Every Black Friday,is the day after Thanksgiving and usually fall on Black Friday, dunno why but every retailers will beat each others price to meet their sale target.Furthermore, US depend 2/3 of their GDP on consumer spending. So just spend and spend, that why US bank love to offer credit cards to their customer, provided they have good credit score or FICO points,no money no problem!!FICO points play very important part in every US residents lives. If you need to buy a home, you need a loan from mortgage company or financial institution, they will loan you the amount and rate depend on your FICO point. If you need to buy a car,you can't afford to paid off cash, you need to get a loan from bank, again your bank need to check your credit report to rate your APR% and the amount you going to get.Same things apply when you need to rent an apartment, your landlord wanna to check your credit report, make sure you're able to pay your rent and have good credit rating.Again when you need to look for job, your employer need to check your credit report, make sure you 're in good standing. So everything in our life evolved around FICO point or our credit report.Sorry,I'm carry away with this, maybe I'm watching Suzu Orman show too much!! ahahaha!!.Actually,a lot of American have no idea about how FICO system work and it's can't be a tragedy when something happened in their life.Well, this topic is about Black Friday,so let me go back ....I have no intention to go shopping today but my MIL have problem with her constipation. She wanna to go to hospital emergency .Early in the morning she ask hubby to drive her to CVS to get medication,I guess the medication not working. So she prefer to see doctor.I drive her to Stony Brook Hospital, while waiting for her I shop at Walmart with Mishu. After 3 hours, she still not discharge,I keep calling the hospital,is she almost done but not.Too bad,I have to go back home and feed Mishu dinner.Elliot suggest I go home and wait until she call when ready. Her doctor was able to cure her problem,so they release her after 4 hours. She said the doctor who look like Barack Obama treat her well..Actually hospital in Long Island have better service with Hospital in NYC.She been complaining her problem the first day she here....ahem!!...let see what I bought in Walmart...not much actually.....hmmmm...A hand mixer cost under $6.00,Mishu Disney's PJ $ 5.00 a set so I bought 3 sets, original price $9.95,Elliot's Fruit of Loom underwear under 8.00 for 4...that good deal,so I bought 2 packs,Mainstay Large towel under $4.00 for 2.....a pairs of jean for him $7.50 ,replacement shaving blade 8 pc for $15.95 and some groceries as well. All of this I spend about $90.00 plus.....but I see nothing!!!...that mean good deal we are spending more!!..Gas almost hit $100 a barrel!!.Long Island gas for 87 or regular cost $3.40 liao!!
Mishu love shrimp but she hate any greens.I don't care, still add in some snow peas and carrot!!.She pick up each of them and push aside.I dunno who teach her to hate greens?.When she was a baby ,I feed her carrot and peas in her congee every days..People tell me kids change their eating habit so often.I hope when she grow up,she will love to eat green for her own good.I used to hate greens when I was a kid, refused to eat cilantro or choy sam,now love it dearly.
Yesterday ,I have to remind Elliot to wake me up at 11.00 am.I prepared some of my foods, like peeling and cutting from yesterday. Can you believe ,that I make and cook everything from scratch??.I been toiling in my kitchen for 5 hours just cooking and preparing all the foods not including washing dishes, mopping and sweeping floor!!.Look at my burn turkey breast!!.I forget to switch back 375 F oven after preheat setting. The first hour my turkey breast burnt already!!.Anyway,it's alright ,we don't eat turkey skin,so just removed and throw away. This year ,I bought a 12 lbs Turkey instead of 20 lbs every previous year.Elliot love Emeril Laggasse cooking and recipe,so I brine and cook all my Thanksgiving meal using Emeril's recipes.Brine and Roast Turkey from Emeril's live cooking show which I watch this week.I brine it accordingly as he said, but since my fridge is full,I just put it out on my deck whole night,in a large pot covered.Usually I just store all my soda and chili paste on my deck around winter time, since outside temperature is about 30 F plus.Of course,I use his method to make gravy.
Well,I know eating turkey and it's side dishes will do,but I cook my white rice as well.....hahaha!!typical Chinese!.We start dinner at 5 pm ,then after dinner we took a couple hours of nap.I have to wash all my pots and trays by hands and they rest go into dish washer for 2 loads.I realise that my new turkey roasting pan rack was broken when I do dishes.Beside that all the new Turkey plate set which I bought from Linen & Things, doesn't come with salt and pepper as it's said on the box ,5 pieces. We are too full for dessert,it's pumpkin pie with ice cream and cream cheese cake.Dessert have to wait for next day.Overall ,we have wonderful Thanksgiving dinner. Our foods will last us for couple more days.
Whenever I shop at Meat Farm Market,I always see a lot of Collard green on sale .But I never eat this vegetable before so don't dare to buy it.I know collard green is very famous southern dish. It's show in Food Network and Travel Channel, that African American love collard green and it's their comfort food.I asked Elliot, did he ever eat collard green and he said yes.He was in New Orleans many years ago, happen to eat this vegetable cooked by Africa American. He told me that not everyone can make good Collard Green.Well, let see......Still cooking in the pot.I add in the stems together with leaves, just wanna to taste how it's.Actually it's like "choy sam" .

Ingredients
2 pounds fresh collard greens
2 cups water
1/2 cup chopped onion
1/2 cup chopped green sweet pepper
1/2 teaspoon seasoned salt
1/2 teaspoon pepper
2 pound roasted pork belly

2. In a Dutch oven or stockpot combine water, onion, sweet pepper, salt, pepper, and roasted pork belly. Bring to boiling. Add greens, cover and reduce heat. Simmer about 1-1/4 hours or until greens are tender. Remove from heat, set aside and keep warm.
3. With a slotted spoon, transfer to a serving bowl. Makes 6 to 8 servings.
Butternut Squash comes from the gourd family, which is native to the Western Hemisphere. There is evidence to support that the natives of Mexico were eating squash as early as 5500 BC. There are two kinds of squash: summer and winter. Butternut Squash is a winter squash. It has a hard, thick skin and it is filled with seeds. It can range in size from 8 to 12 inches long, and about 3 to 5 inches wide, weighing up to 3 pounds. The color of the Butternut Squash ranges from a yellow to a light tan. Inside, the flesh is orange and has a sweet flavor. Available in early Fall through Winter, you will want to choose a squash that is heavy with few blemishes and moldy spots.
Summer and Fall is all about squash.I can see many type of squash everywhere in the market or road side vendor.I asked Elliot what type of squash he like to eat.He told me he like Butternut squash and he know I have no idea how it look like ,so he describe the shape to me..ahahaha.This is my first time bake Butternut squash.I guess I'm only use to our asian melon or squash..Okay,I get myself some squash education and I look online and search for detail information..Here you goes..
PREPARATION:
Rinse and cut the squash lengthwise.Remove and discard seeds and excess fibers out of butternut squash. Arrange butternut squash pieces, cut-side down, in a large baking dish. Pour hot water in the baking dish to a depth of about 1/4-inch. Bake butternut squash at 350° for15 minutes until tender. Then I scoop out the squash and mix with cinnimon powder, ginger powder butter, raisins, salt, pepper and honey .I scoop back the mixture squash into the shell and top with some blue cheese crumble.I baked it for another 15 minutes. It's ready to eat..
Can anyone tell me how and what should I cook with this cauliflower?.Isn't pretty, real purple color.I have no idea what to do with this giant,I can't resist not to buy it since the last time I saw this giant selling during summer.I would love to taste it and compare with the regular cauliflower. This purple giant weight about 5 pound. They sell yellow and green cauliflower as well. It's locally grown in Long Island.I saw Brussels sprout in whole bunch too but I rather but the loose one than the whole bunch. The price is reasonable cheap for 5 pound,$1.99...of course after removing the stem,it's about 3 pound or less..I wonder how the use scienctific coloring to grow this purple color in natural.I rarely see purple ,deep yellow or green cauliflower until now.Maybe next summer,I must visit Long Island local farm which located at the end of island .I bought it yesterday when doing Turkey shopping at Meat Farm Market,I'm so excited until I forget to buy rosemary and thyme for brine and cook my Turkey.
We have wacky freezing weather with rain these days.Imagine, below 32 plus F at night a 40 plus F at day time.If possible I rather stay at home and bundle up.I hate winter especially when the heater is going whole day long. It's make me uncomfortable and give me headache most of the time.Even though I been here for many many moons, but still I'm not use to winter cold.So last week,I decide to make "Bak Kut Teh" for both of us....Mishu and Mommy!!.Hubby hate herbal smell...he said stinky but I said good fragrant!!.I have some pork rib leftover from BBQ,so I might as well use it to boil BKT.I used prepacked BKT by Tean's,on top of that I add some "K-chi" to make is sweeter.Mishu love to eat "K-chi" when she drink soup.
Tean's Bak Kut Teh packet contain two individual sachet.I prefer my BKT stronger,so I use 2 sachets. The cooking method is self explanatory at the back of the packet.Easy and simple.Tean's products sell everywhere in Asian supermarket but if you can't get this product in your area, just go to mytasteofasia online store.
