Assam Mackeral Fish

Close up ,look better right?.Actually it's really taste like Assam Laksa,I'm surprised myself too.

I used this pepper as garnishing.It's pretty spicy,believe me.This whole packet just sell for $1.00 ,almost 3 lbs.It's a quick sale,maybe the market order to much,just going to get ride before rotten.I forget what it's called.Maybe bell pepper,anyone?

Did you see 4 Mackerel swimming in the wok?Yes,fresh Mackerel,I bought it at Chinese supermarket ,weeks ago and freeze it.A day before cooking I thawed it in fridge,it's still taste very fresh. oh!! the supermarket in Chinese grocery here,have the service to clean and cut your fish,So it's easier for me.I just tell them how I wanna the fish to be cut or clean.

Over the weekend ,I try to cook my own recipe, Green Assam Fish but it didn't turn out green as you can see in the photos.Actually I used green pepper,the pepper look like chilli padi type but slightly bigger.Unfortunately, the pepper is not really burning hot which I like for my food so I add some long red pepper together in the blender.As usual ,I prefer to use the simple and easy method but still taste delicious and authentic.
Here is my own recipe:
Ingredients
* spices for paste*
2 stalks of lemongrass
10 cloves of fresh garlic
5 shallot
2 inch of ginger
30 small green chili
2 long red pepper
***Note:Grind above spices until fine***
2 red onion(cut to 4)
5 sprig of daun kesum(laksa leave)
1 tomato cut wedge
10 round bell pepper (seed removed)
2 tbsp tamarind powder
2 shrimp cube(Knorr's)
3 tbsp sugar
2 tsp salt
2 tsp chili boh(I prefer XXX spicy)
1 tsp spicy belacan
3 cups water
1/4 cup oil
Method:
Heat non stick wok and add oil.Let the oil heat up and add grind spices.Stirred all spices for 5-10 min until fragrant.Add water ,let it boiled,then add tomato,round pepper,tamarind powder,shrimp cube,sugar and salt .Simmer at medium heat for 10 minute and then add fish.Don't cook fish too long,5 min,if not the fish going to get tough and hard.
Serve warm with rice or noodle.
My second day dinner,I used vermicelli noodle(bee Hoon) mixed with it.It's really taste like Assam Laksa which I love!!!.Did you realise that I didn't use curry powder and turmeric powder.That right,that the reason it's taste like Assam laksa.Yahoo!!..try it if you run out of Assam Laksa paste.It's not bad but the key is must have daun kesum and serai.

Pig in Blanket

First batch pastry,it's more like bread texture.I realised that I need to wrapped 90 % of the hot dog with the dough for the hot dog not to get burn while baking the pastry

Second batch dough,the pastry is very flaky and puffy.Which I like but hubby like the first batch pastry said the second one too flaky and drop all over.

Prepared for baking,while waiting oven preheat .

I baked these Pig in Blanket days ago but don't have the chance to post it until now.I keep wondering how to make puffy pastry from scratch with my skill.Well,since I tried make pizza dough and some sort off names bread.You know what I mean as an amature..Hahaha!!.Anyway,I gave a try since ,I know basically how to make pizza dough and bread.I love to buy Hot dog bun or Hot dog pastry from the Chinese bakery in the city.It's cost $0.80 to $1.20 each depending on the location and bakery.

Mostly the Chinese bakery in the city owned by Hongkies .So their bread and cake style and design mainly refer to Hong Kong bakery decoration.I called hot dog bun but hubby said it's called Pig in Blanket.He told me,go to 'google" and see what it said.That right!!.I guess that how American called it. Pigs_in_a_blanket,.Well,you can use any kind of hot dog or sausage.
The first batch of pastry dough from my recipe book from France.That book method take too many folding rounds and very time consuming.So the second batch of pastry dough,I just 'google" and find it here finecooking
I like simple and easy recipe but not as simple as Rachael Ray method.She not as good cook to me,so I don't care to watch her show.Hubby said she get the show because she is young and pretty.Isn't?.Maybe that right since she have Italian background.You know what I mean....arrrghhh..Sopranos style. Anthony Bourdain keep making nasty remark about her.He don't minced his words.
Alright back to my topic..
I find my second batch puffy pastry is really good and easy to made.Those who like to try yourself,you can follow step by step here at how-to-rough-puff-pastry
I cut the pastry in triangle shape and roll hot dog around it.Just bast it with egg wash before bake at 375 F for 30 minutes.oh!! Preheat oven at 425 F and lower to 375 while baking if not the pastry is still raw inside and hot dog burned.You can see my first batch Pig in Blanket hot dog are overcooked.Anyway,my first batch Pig in Blanket was finished by hubby.He love Pig in Blanket for breakfast!!

This 1000 recipe for dessert actually don't have the recipe for pastry,just refer to per pack frozen which I found it's really misleading.Bought this at BJ's wholesale store

This book used bread machine for the mixing which I find it quite hard to follow.

I love buying cooking and baking book but never apply to use it until now.I have all this books with me for long long time,atleast 10 years.This whole bunch is a small part of my collection.I still have some other recipe books which I didn't post it here.Mostly, I bought these book at Amazon.com and Walden Book Store.Sadly, I lend my Nobu's book by Nobuyuki Matsuhisa to a chef and now he disappear a long with the book.Once a friend told me,don't not lend anyone Cd's or book because you won't get it back.Now it 's proven to be truth.
Well,I would love to collect celebrity chef cook book like Mario Batali,Bobby Flay ,Morimoto,Tsai Ming and the rest.I saw quite a bunch of Food Network chef book selling at discount price in HomeGoods.Well,I'm going to get myself some early Christmas present there..Hahaha!!.Then my next book is going to be "Nobu Now".This Nobu Now is more expensive than the previous Nobu,wonder why?.huh? .Robert De niro need more $$$?

OK..guys,watch out!! I'm going to be the next Iron Chef!!..*just joking*Maybe in my dream.I don't even have the talent and creativity to be a regular cook or baker.From scale one to ten,maybe I'm just below one!! hahaha!!Anyway,I'm going to try out many recipe from my collection, online or blogger recipe.So stay tune!!

Yesterday,I went shopping with Mishu at Shop Rite and AC Moore .I found a Halloween candy mold by wilton and quickly grab it.Both store also offer cake decoration lesson but when I take a look at the schedule, I'm a week late for the lesson.It's no point starting in the middle of the lesson since I have no clues of the basic at all.Well,long story short,I try the plastic mold for Jelly instead.I used Konnyaku gelatin which I bought months ago.At that time, I don't have any creative mold,so I just bought ready made Japanese Jello for Mishu.Now she used to ready made jello taste that is very sweet and she refused to eat Konnyaku jello which is quite plain.Too bad,I have to eat by myself.I'm not a jello person but what to do?.Elliot only eat sweet dessert,furthermore he dislike jello.So I save my breath to offer him.Maybe next time I make it more tasty and more sweet.

We are surprised the whole farm,has nobody except 3 of us with the cashier.Mishu must be wondering why?.Actually it's weekdays,last year we bring her during weekend.

At this farm a pound of pumpkin cost 49 cents and at market it's sell for 25 cents a pound.So we just get her a mini pumpkin.Furthermore,this type of pumpkin can't cook and eat.I just want her to know Halloween custom related to pumpkin .

Halloween, or Hallowe'en, is a holiday celebrated on the night of October 31. Traditional activities include trick-or-treating, Halloween festivals, bonfires, costume parties, visiting "haunted houses", viewing horror films, and going on haunted hayrides. Beside that one of the tradition is pumpkin picking or decorate your home with pumpkin.
Actually I plan to bring Mishu pumpkin picking on Tuesday but we was there on Wednesday instead.The reason is both of us forget where is the farm located.I dragged Elliot go with us ,I take granted that he remember the farm we went last year.There are so many farm in Long Island,mostly all of them are out at far east.I just wanna Mishu to have some fun picking pumpkin in nearby farm.Unfortunately,I drive and drive for 30 min still can't find the farm and it's getting late,so we just hit Walmart to do some shopping.So the next day,I make sure we call first to get direction before leaving home.It's just 20 minutes drive there.It's just 7 exit from our home.
We just spend 45 minutes in the farm.The weather is beautiful,not cold and hot at all,around 70'F.I remember last year,we had to wear sweater and coat with cap.Very windy and cold.Elliot bought 2 apples and a small Mishu's pumpkin.After that we went for a ride down south and Home Depot.Elliot favourite store!.Mishu keep saying "Daddy bring pumpkin"!!.Actually she wanna to said daddy bring me pumpkin picking but she still talking her baby babbles.Overall,we have a nice outing especially we have the whole farm by ourselves.
