Chocolate and Regular flavor Madeleines with some sugar powder sprinkle on top
I made Madeleine 2 days ago,wanna to try out my new pans.This is my second time Madeleine making,I find the process is really simple and easy .I'm not a fan of aluminum or steel material cooking ware or bakeware and now it's proven my nightmare have come true.I guess, I'm not really good using no non-stick bakeware.Years ago a bought a big wok that will rust,the one that Chinese restaurant use for cooking,a chef help me to season with salt and high heat,I only used it once,now in storage..Poor wok...
I use my aluminum Madeleines pan to bake but all my dough stick on the mold.Then I use Kitchen Aid's silicone mold,it's really great!!!.I should buy silicone mold instead if I know it's really do a fantastic job!!.Here is the recipe come with the pan that I used:
Ingredients:
4 eggs
2/3 cup sugar
2 tsp vanilla extract
Grated rind 1 lemon
Grated rind 1 lemon
1-1/4 sticks unsalted butter
1 cup flour
Enough Cocoa to make desired chocolate strenght for choc Madeleines
Method:
Mix one cup of flour and cocoa,set a side.Break eggs into mixing bowl(egg should be room temperature).Beat at slow speed,gradually add sugar,vanilla and lemon rind.Beat for 5 min on high speed until eggs have doubled in volume and have rich creamy consistency.Use rubber spatula,rapidly fold 1/3 flour mixture into egg & sugar mixture.Then alternate mixing butter mixture and flour mixture into egg mixture ,folding rapidly until it all mixed.Fill the shell depressions about 1/2 full(1 tsp).Place immediately in oven and bake for 12 minutes.Your Madeleines will be done when lightly browned and dislodge with end of a knife.Cool shell side up on a rack.Store in airtight container.Serve sprinkled with confectioner's sugar.
It's really soft and semi sweet.You can try to bake at home....it's not really hard.I know Madeleines is quite expensive selling in supermarket..It's also nice to give as gift in this coming season greeting..

hmmm haven eaten Madeleins before... watch Madeline, the cartoon though. Very cute cartoon about a orphan girl.
Beachlover, next time try spraying the pan with some non-stick spray and then dust it with a bit of flour. The Madeleines will come out easier.
Cool, I have been waiting for your review on these madeleines bakewares. Now I know I can buy the silicon one. Lily bought the same silicon madeleines at the outlet store recently on-sales for about $3-$4 only, very cheap compared the the non-stick one. So, I was wondering whether it works just as good considering the huge price difference. Now I know...hehehe...thanks!

oh!! I read the instruction,it's said something like flour for pan,no wonder..I just spray oil on the pan.And it's burn so fast,Aiyoh!! now I understand the concept!!..Okay I will try again..Thanks!

oh!! which outlet aunty Lily go ?.Oh!! I should ask which store in the outlet.$3-4 that cheap!!!.I have a Premium Outlet not far from me,30 min drive,I'm going to look there too!!..I saw Martha Steward new sillicon bakeware in Macy's but very expensive!!
I don't know which store, but is one of those kitchen store. She got it on sales or clearance though.
oh lovely, have not try any madeleins yet but they re sold at klcc.
