Char Kway Teow ( Fried Flat Rice Noodle)

Left over,going into fridge.That is our lunch for tomorrow.
Mishu said CKT is good!!.Look at her thumb up!!hahaha!!.These day she are vegetable picker.She refused to eat any green especially scallion.But I don't care ,I still insist to put vegetable in her meal.

Tonight I decide to fried Char Keoy Teow for our dinner.Daddy eat leftover KFC from yesterday.We went to Ikea's in Nassau county and I suggested Kentucky Fried Chicken for our dinner since we are out.Daddy was tired after work but I dragged him along with us.I want him to watch Mishu while I shop. I found more bakeware in Ikea's...hmmm..cookies and cake season are coming!!
Weeks ago,I bought 2 sheets of fresh Flat Rice Noodle from Elmhurst,NYC..I better cook it before it's going bad again because I didn't put in the freezer.So I decided to stir fried it instead of making noodles soup since I have fresh bean sprout.Here is goes:
Ingredients:
2 sheet of fresh flat rice noodle(cut strip)
2 pc of chicken breast
15 pc of shrimp(clean and deveined)
1/2 pc of fish cake
2 pc calamari(cut strip)
5 cloves of fresh garlic(minced)
1/2 pound of green mustard(choy sam)
2 stalk of scallion
4 oz of mung bean sprout
4 eggs
Seasoning:
2 tbsp of oyster sauce
2 tsp of chicken powder
1 tsp of soy sauce
1/4 oil
Method:
Heat 1 tablespoon oil in a wok over medium heat. Add eggs and scramble,remove in a plate. Heat 2 tablespoons oil in a wok over medium-high heat. Stir in garlic,fry until fragrant,then add chicken,calamari,shrimp and fish cake for 3 minutes.Removed and scoop into scramble egg plate. Add in the flat rice noodles,green mustard and cook for 2 minutes, stirring continuously.Sprinkle with a little water, mix in all the fried ingredients and seasoning together with the noodles. Stir in the mung bean sprouts,do not overcook the bean sprout.I like it crunchy and crisp.Remove the dish to a plate and serve hot.
You can eat it with cut red pepper or Shrimp Crispy Chilli from mytasteofasia .But I prefer mine with chilli padi!!Viola!!.The spicy the better for me..
