Homemade Sambal


The first batch of sambal paste cooling down before ready for storage in fridge

Scoop in a pint and ready for storage.

Almost ready,look brownish and fragrant
The second batch with kaffir lime leaves and dry shrimp in non-stick wok stirring until fragrant.


In non-stick wok frying until brownish and fragrant.
Second batch with dry shrimp and kaffir lime leaves in blender.

I have to use blender for this quantity to mashed all the ingredients.Forget about pestle and mortar,that take too long!!


At last I found some fresh lemongrass( serai) in HongKong Supermarket Elmhurst.I guess that supermarket have serai all the time because that location heavily concentrate of Malaysian,Thailand,Filipino and Indonesian.Usually I will add curry powder with my spices but this time I omit it since I have plenty of prepacked Delimas Curry Paste.Then I can use the spices for stir fry meat or vegetable like what suggested by Chef Gert .I made two type of sambal,one with kaffir lime leave (daun limau purut) and dry shrimp(har mai) and one without both items in it.I forget to get candlenut(buah keras).Well here's goes..

Ingredients.

1 pack of red small chilies(soaked in hot water overnight)
10 long red pepper
1 lb of shallot
2 bundle of garlic
1/2 cup of dried shrimp(soaked in warm water)
100 gm of kaffir lime leaves
3 stalk of serai (lemongrass)(cut or sliced)
2 inches of ginger
2 inches of galangal
sugar and salt to taste
2 cups of oil

Method:

1) Blend all the ingredients together well.
2) Heat oil in a wok and pour in the blended ingredients.
3) Once the ingredients starts to bubble lower the flame to medium and simmer for 1 hour.
4) Add in sugar, kaffir lime leaves,dry shrimp and salt(for second batch)
5) Continue to stir to prevent the mixture from sticking to the bottom of the wok until fragrant(I prefer to use non-stick wok)
6) Simmer until the sambal is reddish-brown in colour and oil separated from the mixture.
7) Cool and store for future use in pint container in fridge.

I cook these sambal in late evening until 12.00 am.Elliot didn't said a word about the smell and smoke.In return the next day my neighbor told Elliot that they smell something good coming out from my kitchen at 11.30pm.huh?..something good?.I'm so surprised ,she told me it smell good.The last time I gave her a bowl of curry chicken,she didn't even eat and thrown into her sink.Her daughter bring back my bowl told me ,"my mommy said that stuff is yucky and mommy dump all in the sink'!.wau la!!.now she give me compliment about my sambal!!..So I quickly go to my deck and told her that maybe she smell lemongrass that I'm cooking.I told her that I know she doesn't like spicy food,so I don't dare to give it to her.Well,she is typical American who only know how to eat hamburger ,steak and fries.
Now I have my ready made sambal prepared, I can cook any dish with it anytime,just add tamarind and belacan later.Viola!!

Wow beachlover, I'm so craving for those sambal. Unfortunately, I can't cook sambal in the house. The King and little queen tak kasi I cook sambal in the house - reason: wangi sangat.

Aduh, lain kali itu curry chicken kasi sama Cath... Rugi oooo your neighbor dumped it into the sink. Apa lah..!!!!

Beachlover, nice looking sambal. Now you can use it to cook fried rice, fried meehoon, sambal okra :) :) Elliot really good lah didn't complain about the smell. I will usually cook mine when Carlos is at work and then spray the whole house with freshener :)

Cat, when I cook the sambal again I mail you a bottle ok.

ooohh... sambal. I would love to have sambal but I can't cook it at home. My significant other would faint at the smell of it.

Gert...yes I already cook it with 2 others stuff,I post it later.yeah,Elliot kind use to mine cooking all this weird food all the time,but this sambal without belacan is ok,not so smelly.Anyway,I open all doors and windows.I don't really wanna to take my chance with him during winter,so now I already prepare my stock.

oh!! you have the same problem?.yeah,my ang mo hubby bising bising at first when I cook all this pungent smell food but now he complaint lesser.Usually I make his favourite food b4 I made my special smell food.Sumbat his mouth first!! lol!!Thanks for dropping by:)
