Coconut Shrimp with Orange Marmalade

Prepared Coconut Shrimp for chilling process in freezer before frying.

I love outbacksteakhouse version Coconut Shrimp.Whenever we eat at Outback's restaurant,I always order 2 plates of coconut shrimp as a entree since I didn't eat steak.There is so many different version out there.I found this version at Allrecipes.com and adapt to mine own version.Here's goes..

INGREDIENTS
1 egg
1/2 cup all-purpose flour
1 1/2 teaspoons baking powder
1/4 cup corn flour
1 pack of fresh coconut flakes
24 shrimp(rub with salt and pepper optional)
3 cups oil for frying

Method:

Beat egg in a medium bowl and another bowl mixed with 1/2 cup flour,1/4 corn flour and baking powder. Place coconut flakes in a separate plate for coating.
Hold shrimp by tail, and dredge in flour, shaking off excess flour. Dip in egg batter; allow excess to drip off. Roll shrimp in coconut, and place on a baking sheet lined with wax paper or non stick baking tray. Refrigerate for 30 minutes but I put in freezer for 15 minutes .Meanwhile, heat oil to 350 degrees F (175 degrees C) in a deep-fryer.
Fry shrimp in batches: cook, turning once, for 2 to 3 minutes, or until golden brown. Using tongs, remove shrimp to paper towels to drain. Serve warm with your favorite dipping sauce. I used Orange marmalade mix with Honey mustard.

Tips:.The secret is chilling.To speed solidification, I placed shrimp in the freezer for fifteen minutes instead of the refrigerator for thirty minutes. I deep fried the shrimp with exceptional results. The browning only took maybe two minutes per side. They looked beautifully golden brown and I lost very little coconut in the frying process.

I just eat 3-4 pieces and the rest was finished by Mishu.She love seafood.Elliot not really like my coconut shrimp, he just eat one.Maybe he not used to coconut like us or my shrimp coated too much coconut flakes.Next time I should try to use beer in the batter and dry coconut flakes as suggest in AllRecipes.com.I used fresh coconut flakes and it's stick too much coconut on the batter.So it taste more coconut flavor than shrimp flavor.Overall this Coconut Shrimp is awesome.

Another simple and easy resipi. Always like fried shrimp for some reason... Tempura is one of my favourite. At a glance, your coconut shrimp looks like tempura.. YUM...

Beachlover, I too will order coconut shrimp each time I go to Outback. I really like their dipping sauce with it.
