Look at the peanut butter Jin Dui",appearance not really look good but taste not bad at all.Maybe I cut it while it's still hot,so the ball is out of shape.Full of sweet potato flavor. The other half is with crush peanut and sugar. The 'Jin Dui" skin is quite thick but it's OK as long as it's have more sweet potato not only glutinous flour .
I love this steamer already.Sweet potato still retain it's sweetness.Very easy to wash and store. Also can use just the pot for boiling soup beside steamer.Double job!!
I bought 3 pieces of sweet potato from Chinatown few weeks ago.As usual, 2 pieces have to go to trash,so I left with a big piece now.Hmmm...what should I do now with this sweet potato??.I was surfing food blog and saw 'Jin Dui"..That right!!I can make "jin dui' with sweet potato!!.Then how about the filling??..Well,I still have some fried peanut left from the rojak.Peanut?..peanut?peanut?....here come peanut butter flashing my mind..Never try peanut butter in "jin Dui" but,why not give it a try??.Ok,I start peeling and cutting the one and only sweet potato.I remember I bought a steamer from biglots at $10.00.Quickly I start looking for my brand new steamer.Found it and still inside a box. It's a 4 qt pot with insert and cover. Not bad for $10.00!!.
Here is my recipe
Ingredients for the skin
_________________
1 pc of sweet potato(1 lbs~steam or boil and mashed it)
1 cup of glutinous rice flour
1 dash of salt
1 dash of salt
1/2 cup of water
1 cup of sesame seed(prefer not roasted)
Note;Since I steam sweet potato,I need to add water when mixing with glutinous flour. If you boil it,maybe it wet enough with water retention,so omit water.I also omit sugar ,sweet potato is quite sweet since I just mix with lesser flour.
For Filling
________
Crush roasted peanut , peanut butter or red bean paste
Method:
Mix glutinous rice flour and mashed sweet potato together. Knead mixture well and sprinkle in the hot water. Knead dough into small balls and roll each ball into a round, flat shape. Spoon on some peanut butter or roasted crush peanut and knead back into balls. Coat balls , then roll thoroughly in sesame seeds.Deep fry on a low heat until the balls are golden and puffy.. Drain on a paper towel and serve.
It's quite a simple and easy dessert to make.Next time, I'm going to try some Yam or Taro skin with red bean paste..that will be very long time to come..I'm the only one who going to finish all this "Jin Dui" for breakfast and lunch...Anyone want to help me??.
