Mix well cut hard boiled eggs with potato,bacon and mayo.Let it chill at least 30 minutes before serve.
Elliot co-worker invited us to their BBQ party last week in Middletown, Upstate NY..It's take us two and half hours to drive there.One of the dish they serve was Potato Egg Salad.I find this dish are good and easy to serve as side dish.I didn't ask them about this recipe,don't think it's nice for our first time meeting.When I come home.,I try to make this salad in my own version.Elliot surprisingly ask me,did I ask them for this recipe when he see, I serve him Potato Egg Salad with his dinner.Well,he don't like to eat rice like Asian,so mostly all his meal serve with bread ,potato or steam well done beans.No,I told him but I taste the food and I just assume what is in the ingredients. American salad is simple to make not like Asian dish so complicated with so many spices..He took a spoon and said it's not bad ,just not enough egg.OK,this time I add more eggs and less potato.
Here is my own recipe..
Ingredient

2 lbs of baked potato(peel ,cut cube and boil)
5 Stripe of Bacon(cut small and microwave)
4 hard boiled egg(cut cube)
3 tablespoon of mayo
Salt to taste
Mix all the ingredients in a bowl .Let it chill in fridge for half an hour before serve.It's best to serve with steak, pork chop or any bbq meat.Put it in a tight lid container in the fridge and can last for 4 days.It's so easy and quick to make.Give it a try and it's really simple.
