Banana Walnut Cake and Apple Upside Down Cake


Apple Upside Down Cake,some damaged on the top.Few pieces of apple break off.

I cut the center of Banana Walnut Cake and look what I see!!.Walnut more than Banana!!

Banana Walnut Cakes removed from mini cake pan after 15 minutes cool down.

Banana Cakes,just take it out from oven,still sizzling hot.This cake pan is very mini and non stick.Also belonged to my MIL.


Banana Cake still baking in the oven.I really watch the clock this time if not it will burn again.I dunno how to use the timer on the oven.Maybe I should get one portable timer.

I make 2 tray of Apple Upside Down Cake.Touch the pan with butter.

This whisker/blender is older than me accordingly to Elliot.I need his help every time I want use this machine.Belonged to his mom.




Elliot told me that a lot of little bugs flying around in the kitchen.He point to the banana that was ripe and black dot on the skin.Well, actually I'm thinking of making Apple Upside Down Cake by Chef Gertrude SnippetsOfmyLife again.Early in the day Elliot ask me ,about the Apple Upside Down Cake dessert that I made the other day.I made it's too sweet and too damaged,so not picture for that cake.He thought I still have some left over in the fridge.I told him we still have plenty of apple from apple picking but not the dessert.
Then suddenly ,I'm thinking maybe I should make Banana Cake and Apple Upside Down Cake again.Elliot is going to work on my kitchen wall,install back splash at the back of the oven.At last he want to do my assignment for him after spending 4 days of his vacation watching TV and resting.So I have to feed him something sweet and encourage him to work . But I'm worried about Mishu left eye.This afternoon she woke up with her left swollen again.I guess, she was bite by bugs or spider.This is the second time happened to her.I call her pediatrician at 4.30pm,told her about Mishu condition.She told me to bring her in right now but it's a long wait.OK ,I told her that I will be there in 10 minutes.I quickly change Mishu and start grabbing my keys and handbag.Luckily, we didn't wait for long time,maybe the doctor office staffs want to go home too.After doctor visit,I went to food shopping while waiting for Mishu prescription.
To make the long story short,I didn't start to prepare my baking until very late in the evening.
I try to find an easy Banana Cake recipe online and at last I found one.While I'm coping the recipe,Elliot want to use computer.I told him to copy the recipe for me.He ask me why he should copy the recipe,why not just print it.I told him that I'm going to bake him Apple Upside Down Cake and Banana Cake.He quietly seat down and copy for me.

A-Number-1 Banana Cake

"This is a very versatile and fast cake recipe. Not only is it moist and delicious, the same batter can be used to make banana bread and muffins. Delicious frosted with chocolate or cream cheese frosting."

INGREDIENTS
2 1/2 cups all-purpose flour
1 tablespoon baking soda
1 pinch salt
1/2 cup unsalted butter
1 cup white sugar
3/4 cup light brown sugar
2 eggs
4 ripe bananas, mashed
2/3 cup buttermilk
1/2 cup chopped walnuts

DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 - 8 inch round pans. In a small bowl, whisk together flour, soda and salt; set aside.
In a large bowl, cream butter, white sugar and brown sugar until light and fluffy. Beat in eggs, one at a time. Mix in the bananas. Add flour mixture alternately with the buttermilk to the creamed mixture. Stir in chopped walnuts. Pour batter into the prepared pans.
Bake in the preheated oven for 30 minutes. Remove from oven, and place on a damp tea towel to cool.
I cut a piece of the banana cake and try it first.It's good not too sweet.I like it better than the teabread I made.As for the Apple Upside Down Cake ,I double the measurement to make 2 trays.Well,I think I still need to improve my way or skill for baking this cake.This is my second attempt to bake this cake but some apple still sticking on my pan when I turn upside down on the plate.Anyway,this time,the cake is not too sweet but too wet,I guess. I make too much cakes in a day.Tomorrow ,I'm going to give some to my neighbor,better than to let it grow mold and fungus sitting on my counter.I hope they like both of my cakes.

Beachlover, this time all your baking turn out really nice. As for the upside down apple cake you mentioned that is wet. Is it wet on the apple side or the cake? If is on the apple maybe it might be the apple you used. Some apple are softer and juicer than others.
I like your banana cake.

How is Mishu eye. Hope the swell has gone down. Give her a big kiss for me :) :)

Gert,thanks for your confident and compliment!!.I think the wet side is on the apple side or maybe I should bake longer .I gave my cakes to 2 of my neighbors.One of my neighbor is very good at baking(owned catering biz in Brooklyn).She told me that I should put really brown sugar instead of light brown sugar.She also advise me to let the pan sit on the cake when I turn upside down.I request her to let me watch when she doing her baking.
Today Mishu left eye look like mata sepit.She didn't complaint but we have to force allergy medician down her throth.Thank you for asking:).Btw,I show Elliot your blog page,he praise your pix skill,said your pix arrangment look pro!!:)

Hope Mishu will get better soon.
I tried to bake soe banana cake last weekend, and it turned out hard like a rock... Tak tahu what I did lah... Maybe not enough baking soda/powder... Macam batu.. Malu nak tunjuk in my blog.

Cat..thank for asking.Mishu eye still swallon.I think some spider bite her while she playing at her swing..Don't worried,I'm the same shoe!!lol!!I throw my previous teabread in tong sampah after few day..Just keep baking!!
